Ok, my bosses must not read this post cos I am really falling behind my readings and my work is piling up.
And yet I cant resist the temptation.
It has been 14 long years since the last I baked something! I wasn’t confident at all. I was worried I would burn my cakes. Not that I burnt my cakes before, I do not know where that fear came from.
Many would have called me stupid for not leveraging on my mama’s well stocked kitchen – read: Ariston Oven, Kenwood Mixer and a working kitchen scale (I later on found out she even has paper cups for cup cakes but I already bought my own)
All I need was flour, sugar, butter and vanilla essence (but vanilla essence has been banned in my house even before I started my second batch of cupcakes. But the batch without vanilla essence turned out equally nice =P)
Anyway, I did not want to spend too much since I know I am just running a baking fever here. But this is definitely an understatement, money-wise…
I bought my ingredients from Giant (oh boy, the cupcake cases were ugly, uglier than the ones my mama usually uses but I did not have a choice, it was pouring the whole day). I thought I was smart. When I reached home, the first thing I did was to make sure the oven and the mixer were working. They were indeed working, then I started to open my ingredients. I poured everything into the mixing bowl as instructed and turned the knob….
Five seconds later, there was a cloud of smoke around the mixer. I thought it was the flour flying out of the bowl. I continued to watch it mix.
Another 5 seconds, I thought I smelt something burning in front of me. But cannot be, cos I was home alone and nobody was cooking. The gas stove was not on either…
Another 5 seconds later, I SAW SMOKE COMIN FROM BEHIND THE MIXER!
Oh damn…. too long never use le… argh
What was I suppose to do with a bowl of nearly flour, sugar and butter still in a “differential-able” state and another bowl of well beaten eggs on the table now?!
I left the ingredients in the mixer bowl, drove to Century Square and bought the same mixer for my mama for $388 (kaoz, and I learnt that a Phillips mixer only cost $42, my mama is sooo upmarket lor)
And since its the same mixer from Kenwood, I went home, took the blades and the mixer bowl and fixed it to the new mixer and continued…
Other than looking abit like mini huat kuehs, I think they are not too bad afterall, haha.

Miffy’s first Chocolate Cup Cakes

Miffy’s Vanilla Cup Cakes without vanilla essence!
And here’s the Cupcakes for Dummies’ recipe:
Ingredients:
150g Butter (Softened)
100g Superfine (Castor) sugar
175g self raising flour
3 eggs
2 tbls cocoa powder
1 tsp vanilla essence (BANNED!)
Method
- Pre-heat oven to 180 degrees C
- Line 12 cupcake pan with cup cake cases
- Crack eggs into a bowl and mix
- Dump all ingredients into Mixer bowl
- Mix until light and creamy (I took that to mean “beat until I happy”
- Divide into the 12 cases
- Bake for 18 mins.
